  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium yellow onion
  • 2 tablespoons fajita seasoning
  • 4 pieces low-carb tortillas
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1 large avocado
  • 0.5 cup sour cream
  • 0.25 cup fresh cilantro
  • 1 medium lime
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Start by prepping the vegetables: slice the red and green bell peppers and the yellow onion into thin strips.

Step 2

Cut the chicken breast into thin slices, approximately 1/2 inch thick.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken slices and cook, stirring occasionally, until the chicken is browned and cooked through, about 6-8 minutes.
