Ingredients

  • 1 medium head Cauliflower florets
  • 2 cups Mozzarella cheese, shredded

  • 1 cup Cooked chicken breast, diced
  • 4 slices Bacon slices
  • 0.5 cup Ranch dressing
  • 0.25 cup Red onion, thinly sliced
  • 0.5 cup Cherry tomatoes, halved
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

Cut the cauliflower into florets and pulse in a food processor until you achieve a rice-like texture.
