Ingredients

  • 1 cup Old-fashioned oats
  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Granulated erythritol sweetener
  • 0.5 cup Unsalted butter, softened
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 2 tablespoons Unsweetened almond milk
  • 0.5 cup Sugar-free dark chocolate chips
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter and granulated erythritol using a mixer until smooth and fluffy.

Step 4

Add the vanilla extract and the egg to the butter mixture and beat until well combined.

Gradually mix the dry ingredients into the wet ingredients. Add in the almond milk, mixing until the dough comes together.
