Ingredients

  • 2 cups Almond flour
  • 2 cups Mozzarella cheese, shredded
  • 2 tablespoons Cream cheese
  • 1 tablespoon Baking powder
  • 2 large Eggs
  • 3 cups Fresh spinach
  • 2 cloves Garlic, minced
  • 1 cup Mixed fresh herbs (parsley, basil, dill), chopped
  • 1 cup Ricotta cheese
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for 1 minute, then stir. Continue microwaving in 30-second intervals and stirring until the cheeses are completely melted and smooth.

Step 3

Add the almond flour, baking powder, and eggs to the melted cheese mixture. Stir until a smooth, dough-like consistency is achieved.

Step 4

On a clean surface, place parchment paper and roll out the dough into a rectangle about 1/4 inch thick using a rolling pin.

Step 5

In a skillet over medium heat, add the olive oil and sauté the minced garlic for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.

Step 6

In a mixing bowl, combine the ricotta cheese, Parmesan cheese, sautéed spinach, chopped herbs, salt, and pepper. Mix well to combine.

Step 7

Spread the spinach and cheese mixture evenly over the rolled-out dough, leaving a 1-inch border on all sides.

Step 8

Carefully roll up the dough starting from one of the longer edges, creating a tight log. Pinch the edges to seal.

Step 9

Place the stuffed bread roll onto the prepared baking sheet, seam side down.

Step 10

Bake in the preheated oven for 25-30 minutes, or until golden brown.

Step 11

Allow to cool for a few minutes before slicing and serving warm.
