Ingredients

  • 300 g Low-carb penne (made from chickpea or lentil flour)
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 medium Onion, finely chopped
  • 400 g Tomato sauce
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 200 g Ricotta cheese
  • 150 g Mozzarella cheese, shredded
  • 50 g Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Bring a large pot of salted water to a boil. Cook the low-carb penne according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onions are translucent, about 5 minutes.

Stir in the tomato sauce, oregano, basil, salt, and black pepper. Simmer for 5 minutes to let the flavors meld.

Remove the sauce from heat and stir in the ricotta cheese until well combined. Adjust seasoning with more salt and pepper if needed.
