Ingredients

  • 400 grams Low carb pasta (such as konjac noodles or zucchini noodles)
  • 2 tablespoons Olive oil
  • 1 whole Large egg
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1.5 cups Mozzarella cheese, shredded
  • 0.5 cup Cheddar cheese, shredded
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Dried Italian herbs
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

If using konjac noodles, rinse them thoroughly under cold water. If using zucchini noodles, pat them dry with a paper towel to remove excess moisture.

Step 3

In a large skillet over medium heat, add 2 tablespoons of olive oil and sauté the low-carb pasta alternative for about 3-4 minutes to remove excess water.

Step 4

In a mixing bowl, whisk together the egg, heavy cream, grated Parmesan cheese, ground black pepper, garlic powder, dried Italian herbs, and salt.

Step 5

Add the sautéed pasta to the mixing bowl and toss gently to coat it evenly.

Step 6

Spread the mixture evenly into a baking dish.

Step 7

Sprinkle the shredded mozzarella and cheddar cheeses over the top of the pasta mixture.

Step 8

Place the baking dish in the preheated oven and bake for approximately 20-25 minutes, or until the cheese is bubbly and golden brown.

Step 9

Remove from the oven and let it rest for about 5 minutes before serving.

Step 10

Garnish with additional herbs if desired, and serve warm.
