Preheat your oven to 375°F (190°C).
Place the pork loin on a clean cutting board. Using a sharp knife, carefully butterfly the pork loin by slicing it lengthwise in half without completely cutting through to the other side. Open the pork loin like a book and lay it flat.
Season the inside of the pork loin with a pinch of salt and pepper.
In a medium mixing bowl, combine the cream cheese, shredded mozzarella cheese, spinach, minced garlic, and parsley. Mix well until fully combined.
Spread the cheese mixture evenly over the opened pork loin, leaving about a 1-inch border around the edges.
