Ingredients

  • 8 pieces Almond flour tortillas
  • 2 cups Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4 oz Cream cheese, softened
  • 1.5 cups Enchilada sauce (low carb)
  • 3 stalks Green onions, chopped
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine cream cheese, 1 1/2 cups of shredded cheddar cheese, cumin, chili powder, garlic powder, salt, and black pepper. Mix until well combined.

Step 3

Spread 1/4 cup of the enchilada sauce on the bottom of a 9x13 inch baking dish.

Step 4

Take an almond flour tortilla and spoon about 3 tablespoons of the cheese mixture onto the tortilla. Roll it tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

Step 5

Pour the remaining enchilada sauce over the rolled tortillas, spreading it out evenly to cover all the tortillas.

Step 6

Sprinkle the remaining 1/2 cup of cheddar cheese and 1 cup of Monterey Jack cheese over the top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Remove the enchiladas from the oven and let them cool for about 5 minutes.
