Ingredients

  • 1.5 cups Almond flour
  • 2 cups Mozzarella cheese
  • 2 tablespoons Cream cheese
  • 1 large Egg
  • 2 cups Fresh spinach, chopped
  • 1 cup Feta cheese, crumbled
  • 1 tablespoon Olive oil
  • 0.5 medium Onion, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Baking powder
  • 1 large Egg wash (1 egg beaten with 1 tablespoon water)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and well combined.

Step 3

Add the almond flour, baking powder, and a beaten egg to the melted cheese mixture. Mix until a dough forms.

Step 4

Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thick.

Step 5

In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes.
