Ingredients

  • 4 cups Cauliflower, riced
  • 1 piece Chicken breast, boneless and skinless

  • 0.5 cup Green peas, frozen
  • 1 small Carrot, diced
  • 3 stalks Green onions, chopped
  • 2 cloves Garlic, minced
  • 3 tablespoons Soy sauce (low sodium)
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by preparing the cauliflower rice if not using pre-packaged. Break one medium-sized cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.

Step 2

Dice the chicken breast into small, bite-sized cubes and set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
