Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 4 stalks Green onions
  • 1 medium Carrot
  • 0.5 cup Peas
  • 2 large Eggs
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes
  • 1 cup Cooked chicken breast (optional)

Directions

Step 1

Begin by preparing the cauliflower. Remove the leaves and core, then chop the cauliflower into chunks. Grate the cauliflower using a box grater or pulse it in a food processor until it resembles rice grains.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Step 3

Add the minced garlic and sliced green onions (reserve some for garnish) to the pan and sauté for about 2 minutes, until fragrant.

Step 4

Dice the carrot and add it along with the peas to the skillet, cooking for an additional 3 to 4 minutes until softened.

Step 5

Push the vegetables to the side of the skillet and add the remaining olive oil. Crack the eggs into the pan and scramble, cooking until just set, then mix with the vegetables.

Step 6

Stir in the cauliflower 'rice' and sauté for 5 to 7 minutes, until tender but not mushy.

Step 7

Add the soy sauce, sesame oil, salt, black pepper, and red pepper flakes. Stir well to combine all ingredients.

Step 8

If using chicken, dice it into small pieces and stir into the mixture. Cook for an additional 2 to 3 minutes until warmed through.

Step 9

Remove from heat and garnish with reserved green onions.

Step 10

Serve hot and enjoy your flavorful, low-carb cauliflower fried rice.
