Ingredients

  • 1 head Cauliflower
  • 1 cup Heavy cream
  • 2 cups Cheddar cheese, grated
  • 2 tablespoons Cream cheese
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives, chopped for garnish (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Trim the cauliflower into florets, discarding the core. Rinse thoroughly.

Step 3

Bring a large pot of salted water to a boil and add the cauliflower florets. Blanch them for about 5 minutes until just tender. Drain well and set aside.

Step 4

In a medium saucepan over low heat, combine the heavy cream, cream cheese, Dijon mustard, and garlic powder. Stir until the cream cheese is melted and the mixture is smooth.

Step 5

Gradually add 1.5 cups of grated cheddar cheese to the cream mixture, stirring continuously until the cheese is fully melted and the sauce is creamy.

Step 6

Season the cheese sauce with salt and black pepper to taste.

Step 7

Arrange the drained cauliflower florets in a baking dish. Pour the cheese sauce over the cauliflower, ensuring it is evenly coated.

Step 8

Sprinkle the remaining 0.5 cup of cheddar cheese over the top of the cauliflower.

Step 9

Bake in the preheated oven for about 15-20 minutes, or until the cheese on top is bubbly and golden brown.

Step 10

Remove from the oven and let cool slightly. Garnish with chopped chives if desired before serving.
