Ingredients

  • 2 tablespoons olive oil
  • 500 grams carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons ground coriander
  • 1000 milliliters vegetable broth
  • 30 grams fresh coriander leaves, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, celery, and garlic. Sauté for about 5 minutes until the onion is translucent and fragrant.

Step 3

Stir in the ground coriander and cook for an additional minute to release the aroma.

Step 4

Add the chopped carrots and the vegetable broth to the pot.

Step 5

Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the carrots are tender.

Step 6

Remove the pot from heat and let it cool slightly.

Step 7

Using a hand blender, carefully blend the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth.

Step 8

Return the soup to the pot (if using a countertop blender) and stir in the fresh coriander, salt, black pepper, and lemon juice.

Step 9

Taste and adjust the seasoning if necessary.

Step 10

Reheat gently if needed before serving.

Step 11

Serve hot, garnished with a few sprigs of fresh coriander.
