  • 2 pounds beef chuck, cut into 1-inch cubes

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 6 dried New Mexico chiles, stemmed and seeded
  • 4 dried ancho chiles, stemmed and seeded
  • 1 teaspoon unsweetened cocoa powder
  • 4 cups beef broth
  • 2 tablespoons lime juice
  • 0.25 cup cilantro, chopped

Directions

Step 1

Season the beef cubes with salt, black pepper, and ground cumin. Set aside.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides. Do this in batches if necessary to avoid overcrowding the pot. Remove the beef and set aside.

In the same pot, add the chopped onion and garlic. Sauté for about 5 minutes until the onion is soft and translucent.
