Ingredients

  • 1 lb flank steak
  • 2 tbsp olive oil
  • 3 tbsp lime juice
  • 3 tbsp orange juice
  • 4 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 0.5 tsp ground black pepper
  • 0.5 tsp salt
  • 4 low-carb tortillas
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 1 avocado, diced
  • 0.5 cup salsa
  • 2 tbsp fresh cilantro, chopped

Directions

Step 1

In a shallow dish, combine olive oil, lime juice, orange juice, minced garlic, ground cumin, dried oregano, smoked paprika, ground black pepper, and salt. Mix well to create the marinade.

Step 2

Place the flank steak in the dish, turning to coat it well with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.

Step 3

Remove the steak from the refrigerator about 30 minutes before cooking to bring it to room temperature.

Step 4

Heat a grill pan or outdoor grill over medium-high heat. Once hot, remove the steak from the marinade, allowing excess marinade to drip off.

Step 5

Grill the steak for about 4-5 minutes per side, depending on thickness, for medium-rare. Adjust time for desired doneness.

Step 6

Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes before slicing thinly against the grain.

Step 7

On a flat surface, layer each low-carb tortilla with shredded cheddar cheese, slices of carne asada, sour cream, diced avocado, salsa, and chopped cilantro.

Step 8

Fold the sides of the tortilla over the filling, then roll it up tightly to enclose, making a burrito.

Step 9

If desired, heat the wrapped burrito on a dry skillet for 1-2 minutes per side, until golden and crispy.

Step 10

Serve immediately and enjoy your low-carb carne asada burrito.
