Ingredients

  • 4 ounces Cream cheese, softened
  • 1 cup Heavy cream
  • 1/3 cup Erythritol sweetener
  • 1 teaspoon Unsweetened vanilla extract
  • 3 tablespoons Butter
  • 1/4 teaspoon Sea salt
  • 1 teaspoon Powdered gelatin
  • 2 tablespoons Water

Directions

Step 1

In a small bowl, sprinkle the powdered gelatin over the water and let it sit for about 5 minutes to bloom.

Step 2

In a small saucepan, melt the butter over medium heat until it begins to brown slightly and has a nutty aroma. Be cautious not to burn it.

Step 3

Add the erythritol sweetener and sea salt to the pan, stirring continually until the erythritol is dissolved.

Step 4

Reduce heat to low and add the softened cream cheese, mixing until melted and smooth.

Step 5

Add the bloomed gelatin mixture and stir until fully incorporated. Remove the saucepan from heat and let it cool to room temperature.

Step 6

In a large mixing bowl, whip the heavy cream and vanilla extract using a hand mixer or stand mixer on high speed until stiff peaks form.

Step 7

Fold the cooled caramel cream mixture gently into the whipped cream until well combined and smooth, being careful not to deflate the whipped cream.

Step 8

Divide the mousse evenly into four dessert cups or bowls.

Step 9

Refrigerate for at least 2 hours to let the mousse set and flavors meld.

Step 10

Garnish with a sprinkle of sea salt or a small dollop of whipped cream before serving, if desired.
