Ingredients

  • 12 large leaves Swiss chard leaves
  • 250 grams Ground chicken
  • 50 grams Almond flour
  • 1 large Egg
  • 100 grams Full-fat Greek yogurt
  • 50 grams Cream cheese
  • 1 small, finely chopped Onion
  • 2 minced Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon, freshly grated Nutmeg
  • 200 ml Heavy cream
  • 2 tablespoons Butter
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Blanch the Swiss chard leaves for 1 minute until just tender. Remove immediately and plunge into ice water to cool. Drain and set aside.

Step 2

In a mixing bowl, combine the ground chicken, almond flour, egg, Greek yogurt, cream cheese, chopped onion, minced garlic, salt, black pepper, and nutmeg. Mix until well combined.

Step 3

Lay out a Swiss chard leaf on a clean surface. Place about 2 tablespoons of the chicken mixture at the base of the leaf. Fold in the sides and roll it up tightly. Repeat with the remaining leaves and filling.

In a large, deep skillet, melt the butter over medium heat. Arrange the Capuns seam-side down in the skillet. Gently pour the heavy cream over the Capuns, ensuring they are mostly submerged.

Bring the cream to a gentle simmer, cover the skillet, and let the Capuns cook for approximately 20-25 minutes, or until the filling is cooked through.

Remove the Capuns carefully with a slotted spoon and place on a serving dish.
