Ingredients

  • 28 oz Unsweetened canned tomatoes (crushed or diced)
  • 2 cups Chicken broth (low sodium)
  • 0.5 cups Heavy cream
  • 2 tbsp Butter
  • 2 cloves Garlic (minced)
  • 0.5 medium Onion (finely chopped)
  • 1.5 tbsp Sweetener (erythritol or monk fruit blend)
  • 1 tsp Dried basil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Xanthan gum (optional, for thickening)

Directions

Step 1

In a large saucepan over medium heat, melt the butter.

Step 2

Add the chopped onion and sauté for 3 minutes, until softened.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Stir in the canned tomatoes and chicken broth. Bring the mixture to a simmer.

Step 5

Add the erythritol or monk fruit sweetener, dried basil, salt, and black pepper. Stir to combine.

Step 6

Reduce the heat to low and allow the soup to simmer for 10 minutes, stirring occasionally.

Step 7

Remove the soup from heat. Use an immersion blender to puree the soup until smooth, or transfer the mixture to a blender, blend until smooth, and return it to the pot.

Step 8

Stir in the heavy cream and let the soup cook on low heat for an additional 5 minutes. Do not let it boil.

Step 9

If a thicker soup is desired, whisk in xanthan gum while the soup is on low heat until fully incorporated.

Step 10

Taste and adjust seasonings as needed. Serve warm, garnished with a sprinkle of chopped basil or a dollop of heavy cream if desired.
