Finely chop the onion and mince the garlic cloves.
In a large mixing bowl, combine the ground pork, chopped onion, minced garlic, 1 tablespoon of fish sauce, stevia, and black pepper. Mix well to combine.
Form the pork mixture into small patties, about 5 cm wide.
Heat a grill pan over medium-high heat and lightly brush with olive oil. Grill the pork patties for about 4-5 minutes on each side or until cooked through and browned. Remove from heat and set aside.
Using a spiralizer, create zucchini noodles (zoodles) from the zucchini and set aside.
For the dipping sauce, finely chop the red chili (remove seeds for less heat) and combine it with lime juice, water, the remaining tablespoon of fish sauce, and apple cider vinegar in a small bowl.
