Ingredients

  • 0.75 cup Erythritol sweetener
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 1 teaspoon Vanilla extract
  • 3 units Large eggs
  • 0.5 cup Dark chocolate chips (sugar-free)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners or lightly grease the pan with cooking spray.

Step 2

In a medium-sized bowl, whisk together the almond flour, unsweetened cocoa powder, erythritol sweetener, baking powder, and salt until well combined.

In a separate microwave-safe bowl, melt the unsalted butter by microwaving in 30-second intervals, stirring in between until completely melted. Let it cool slightly.
