Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 teaspoon Xanthan gum
  • 0.5 cup Unsalted butter, melted
  • 4 ounces Cream cheese, softened
  • 4 large Eggs
  • 2 large Egg yolks
  • 2 tablespoons Erythritol
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Instant yeast
  • 2 tablespoons Warm water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or lightly grease it.

Step 2

In a small bowl, dissolve the instant yeast in warm water and let it sit for about 5 minutes until it looks foamy.

Step 3

In a large bowl, combine the almond flour, coconut flour, baking powder, salt, and xanthan gum. Stir well to ensure all dry ingredients are mixed.

Step 4

In another bowl, beat the eggs and egg yolks together. Add the melted butter, cream cheese, erythritol, and vanilla extract to the eggs, and mix until smooth and creamy.

Step 5

Add the yeast mixture to the egg mixture and stir to combine.

Step 6

Gradually add the wet ingredients to the dry ingredients, mixing continuously until a smooth, albeit thick, batter forms. The batter will be denser than traditional brioche dough.

Step 7

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 8

Place the loaf pan in the preheated oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean and the brioche is golden brown on top.

Step 9

Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Step 10

Slice and serve your low carb brioche generously with butter or your favorite low-carb spread.
