  • 3 tablespoons Olive oil

  • 3 minced Garlic cloves
  • 1 inch, grated Fresh ginger
  • 1 finely chopped Green chili
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 large, finely chopped Tomato
  • 0.5 cup Coconut milk
  • 1 teaspoon (or to taste) Salt
  • 0.25 cup, chopped Fresh coriander leaves

Directions

Step 1

Wash and cube the brinjals, keeping them in water to prevent browning.

Step 2

Heat olive oil in a large pan over medium heat.

Add mustard seeds and cumin seeds, and let them sizzle for 30 seconds.

Add the chopped onion to the pan and sauté until translucent, about 5 minutes.
