Ingredients

  • 4 pieces Chicken breasts
  • 4 slices Thinly sliced ham
  • 4 slices Swiss cheese
  • 1 cup Almond flour
  • 1 cup Crushed pork rinds
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.

Step 2

Place each chicken breast between two pieces of plastic wrap and pound to an even 1/2 inch thickness using a meat mallet.

Step 3

Lay one slice of ham and one slice of Swiss cheese on each pounded chicken breast. Roll each breast tightly, tucking in the ends to form a neat, compact roll. Secure with toothpicks if necessary.

Step 4

In a shallow bowl, combine almond flour, crushed pork rinds, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper.

Step 5

In another bowl, beat the eggs until well combined.

Step 6

Dip each chicken roll in the beaten eggs, ensuring it's completely coated.

Step 7

Roll the chicken in the almond flour mixture, pressing down gently to adhere the mixture to the chicken surface.

Step 8

Place the chicken rolls seam side down in the prepared baking dish.

Step 9

Drizzle the tops of the chicken with the olive oil.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).

Step 11

Allow the chicken to rest for a few minutes before slicing. Remove any toothpicks before serving.
