  • 4 pieces lamb shanks
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 large, chopped onion
  • 2 stalks, chopped celery
  • 1 large, chopped carrot
  • 4 cloves, minced garlic
  • 2 teaspoons, chopped fresh rosemary
  • 2 teaspoons, chopped fresh thyme
  • 2 tablespoons tomato paste
  • 1 cup dry red wine
  • 3 cups beef stock
  • 2 pieces bay leaves

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Season the lamb shanks with salt and black pepper on all sides.

Step 3

Heat olive oil in a large oven-safe pot over medium-high heat.

Step 4

Sear the lamb shanks in the pot until browned on all sides, about 8-10 minutes. Remove the shanks and set aside.

In the same pot, add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables start to soften.
