Ingredients

  • 1.5 pounds Boneless, skinless chicken thighs
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 0.5 cup Soy sauce
  • 0.5 cup Zero-calorie sweetener (e.g., erythritol or stevia)
  • 2 tablespoons Apple cider vinegar
  • 0.5 cup Bourbon whiskey
  • 0.5 cup Chicken broth
  • 0.5 teaspoon Red pepper flakes
  • 2 stalks Green onions, sliced for garnish
  • 1 tablespoon Sesame seeds, toasted for garnish

Directions

Step 1

Cut the chicken thighs into bite-sized pieces.

Step 2

In a large skillet or wok, heat olive oil over medium-high heat.

Step 3

Add the chicken pieces to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add minced garlic and ginger. Sauté for about 30 seconds until fragrant.

Step 5

Add soy sauce, zero-calorie sweetener, apple cider vinegar, bourbon, chicken broth, and red pepper flakes to the skillet. Stir well to combine.

Step 6

Bring the sauce to a simmer and let it cook for about 5 minutes, or until it reduces slightly and thickens.

Step 7

Return the cooked chicken to the skillet and stir to coat the chicken evenly with the sauce. Let it simmer for an additional 5 minutes, allowing the flavors to meld together.

Step 8

Remove from heat and serve the bourbon chicken hot, garnished with sliced green onions and toasted sesame seeds.
