Ingredients

  • 1 lb Pork shoulder
  • 0.5 lb Chicken liver
  • 2 cups Cauliflower rice
  • 1 cup Onion, finely chopped
  • 0.5 cup Green bell pepper, finely chopped
  • 0.5 cup Celery, finely chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1.5 cups Almond flour
  • 2 large Eggs
  • 0.5 cup Olive oil

Directions

Step 1

Cut the pork shoulder into chunks. In a large pot, add pork shoulder and cover with water. Bring to a boil, then reduce heat to simmer until the pork is tender, about 30 minutes.

Step 2

While the pork cooks, simmer the chicken livers in a separate small pot of water until no longer pink, about 10 minutes. Drain and set aside.

Step 3

Once the pork is cooked, remove from pot and allow it to cool slightly. Reserve 1 cup of the cooking liquid.

Step 4

In a food processor, combine cooked pork, chicken livers, onion, bell pepper, celery, and garlic. Pulse until finely ground.

Step 5

Transfer the mixture to a large bowl. Add cauliflower rice, Cajun seasoning, salt, and black pepper. Mix until well combined, then add reserved pork cooking liquid to moisten mixture.

Step 6

Form mixture into 1.5-inch balls.

In a shallow bowl, beat the eggs. Place almond flour in another shallow dish.

Heat olive oil in a large skillet over medium heat.

Dip each ball in beaten eggs, then roll in almond flour to coat evenly.

Install balls into the hot oil in batches and fry until golden brown on all sides, about 5-7 minutes.

Transfer to a paper-towel-lined plate to drain excess oil.
