Ingredients

  • 200 grams Almond flour
  • 50 grams Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 3 tablespoons Olive oil
  • 100 ml Water
  • 200 grams Feta cheese
  • 100 grams Spinach
  • 1 small Onion
  • 2 cloves Garlic
  • 1 tablespoon Butter
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Sesame seeds

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 3

In another bowl, lightly beat the eggs, then add olive oil and water.

Step 4

Gradually mix the wet ingredients into the dry ingredients until a dough forms. Let the dough rest for 5-10 minutes to allow the psyllium to absorb the moisture.

Meanwhile, prepare the filling by chopping the onion and garlic finely.

Step 6

In a skillet over medium heat, melt the butter and sauté the onion and garlic until translucent. Add the spinach and cook until wilted.

Remove from heat and mix in the crumbled feta cheese and black pepper.

Divide the dough into equal portions and roll each portion into a thin oval sheet between two sheets of parchment paper.
