Ingredients

  • 2 cups Almond flour
  • 1 cup Old-fashioned rolled oats
  • 0.5 cup Erythritol or monk fruit sweetener
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 0.5 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 1 cup Fresh blueberries

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang at the sides for easy removal of the bars.

Step 2

In a large bowl, combine almond flour, rolled oats, erythritol, baking powder, salt, and ground cinnamon. Stir together until well mixed.

Step 3

In a separate bowl, whisk together the melted butter, vanilla extract, and egg until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and mix until combined. The mixture should be crumbly but should hold together when pressed.

Step 5

Gently fold in the fresh blueberries, being careful not to break them too much.

Step 6

Transfer the mixture to the prepared baking dish. Press the mixture firmly and evenly into the pan using a spatula or your hands.

Step 7

Bake in the preheated oven for about 25 minutes, or until the edges turn golden brown and the center is set.

Step 8

Remove from the oven and let cool in the pan for at least 15 minutes. Then, carefully lift the bars out of the pan using the parchment overhang.

Step 9

Allow the bars to cool completely on a wire rack before cutting them into squares. Serve and enjoy!
