Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cups Granular erythritol sweetener
  • 3 large Eggs
  • 0.5 cups Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.25 cups Melted coconut oil
  • 0.75 cups Fresh blueberries

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 12-cavity donut pan with nonstick spray or brush with a little coconut oil.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, salt, and erythritol sweetener until well combined.

Step 3

In another bowl, beat the eggs lightly. Then, add the almond milk, vanilla extract, and melted coconut oil. Mix until all wet ingredients are well incorporated.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.

Step 5

Gently fold in the fresh blueberries, being careful not to break them.

Step 6

Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full to allow room for rising.

Step 7

Bake in the preheated oven for 13 to 15 minutes, or until the donuts are golden brown around the edges and a toothpick inserted into the center comes out clean.

Step 8

Remove the donuts from the oven and let them cool in the pan for about 5 minutes.

Step 9

Carefully remove the donuts from the pan and let them cool completely on a wire rack before serving.
