Ingredients

  • 1 large Vidalia onion
  • 1 cup almond flour
  • 1 cup parmesan cheese, grated
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 3 eggs
  • 0.5 cup heavy cream
  • 0 as needed olive oil spray
  • 0 as needed keto-friendly dipping sauce

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut off about 1/2 inch from the top of the onion and remove the peel. Place the onion cut-side down.

Step 3

Starting 1/2 inch from the root, make a downward cut all the way down to slice onion into 'petals'. Repeat and make about 10-12 cuts around the onion.

Step 4

Open up onion gently with your fingers for separating the petals but do not cut through the root.

Step 5

In a bowl, mix almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, cayenne pepper, sea salt, and black pepper.

Step 6

In a separate bowl, whisk together the eggs and heavy cream until well combined.

Step 7

Dip onion into the egg mixture, ensuring all the petals are well coated.

Step 8

Gently dredge the egg-coated onion in the almond flour mixture, ensuring to coat each petal by sprinkling the mixture over the onion. Shake off any excess.

Step 9

Transfer the coated onion to the prepared baking sheet. Spray generously with olive oil spray.

Step 10

Bake in the preheated oven for 20-25 minutes until the onion is golden brown and crispy on the edges.

Step 11

Remove from the oven and allow it to cool for a few minutes.

Step 12

Serve warm with keto-friendly dipping sauce of choice.
