  • 4 large Eggs
  • 0.5 cup Unsweetened almond milk
  • 4 ounces Cream cheese
  • 1 cup Ricotta cheese
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered erythritol
  • 2 tablespoons Butter
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Baking powder

Directions

Step 1

In a large mixing bowl, whisk together the almond flour, eggs, almond milk, baking powder, and salt until smooth and no lumps remain.

Step 2

Heat a non-stick skillet over medium heat and add a small amount of butter to coat the pan.

Step 3

Pour about 3 tablespoons of the batter into the pan, swirling it around to create a thin circle that covers the bottom.

Cook for 2-3 minutes until the edges start to lift slightly and the bottom is golden brown. Flip carefully and cook for another 2 minutes on the other side. Remove and set aside. Repeat with the remaining batter.
