Ingredients

  • 2 cups Almond flour
  • 2 cups Mozzarella cheese, shredded
  • 2 tablespoons Cream cheese
  • 1 large Egg
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Spinach, chopped
  • 0.5 cup Feta cheese, crumbled
  • 1 large Egg yolk, for egg wash
  • 1 tablespoon Water, for egg wash

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for about 1 minute, or until the cheeses are melted, then stir until smooth.

Step 3

In another bowl, whisk together the almond flour, baking powder, and salt.

Step 4

Add the melted cheese mixture to the dry ingredients, then add the egg. Mix everything together until a dough forms. You may need to knead it with your hands to combine fully.

Step 5

Roll the dough between two pieces of parchment paper until it's about 1/4 inch thick.

Step 6

Using a round cookie cutter, cut the dough into circles.

Step 7

For the filling, mix the chopped spinach and crumbled feta cheese in a bowl.

Step 8

Place a small spoonful of the filling in the center of each dough circle, then fold the circle in half to enclose the filling, pressing the edges to seal.

Step 9

In a small bowl, beat the egg yolk with the water to create an egg wash.

Step 10

Brush the top of each pastry bite with the egg wash for a golden finish.

Step 11

Arrange the pastry bites on the prepared baking sheet.

Step 12

Bake in the preheated oven for about 12-15 minutes, or until the pastry is golden brown and cooked through.

Step 13

Allow to cool slightly before serving. Enjoy your low-carb bladerdeeghapje!
