Ingredients

  • 500 grams Bitter gourd
  • 1 teaspoon Salt
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Cumin powder
  • 2 tablespoons Gram flour (besan)
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Coriander powder
  • 1 pinch Asafoetida (hing)

Directions

Step 1

Wash the bitter gourds thoroughly and pat them dry with a clean kitchen towel.

Step 2

Cut the ends off the bitter gourds and slice them into thin rounds, about 1/4-inch thick.

Step 3

Place the sliced bitter gourd in a large bowl. Sprinkle with 1 teaspoon of salt and let it sit for 10 minutes to help reduce its bitterness.

Step 4

After 10 minutes, squeeze the bitter gourd slices gently to remove excess water and some of the bitterness. Rinse under running water and drain well.

Step 5

In a separate bowl, combine turmeric powder, red chili powder, cumin powder, gram flour, coriander powder, and a pinch of asafoetida. Mix well.

Add the drained bitter gourd slices to the spice mixture and toss to coat the slices evenly.
