Ingredients

  • 2 medium Bitter gourd
  • 2 tablespoons Coconut oil
  • 1 medium Onion
  • 1 medium Tomato
  • 3 units Garlic cloves
  • 1 inch piece Ginger
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 0 to taste Salt
  • 10 leaves Curry leaves
  • 1 cup Coconut milk
  • 2 tablespoons Cilantro

Directions

Step 1

Wash the bitter gourds thoroughly. Slice them lengthwise and remove the seeds. Cut into thin half-moons.

Step 2

Soak the sliced bitter gourd in a bowl of salted water for 15 minutes to reduce bitterness.

Step 3

Finely chop the onion, tomato, garlic, and ginger.

Step 4

Heat coconut oil in a pan over medium heat. Add mustard seeds and cumin seeds. Sauté until they crackle.

Step 5

Add chopped onions and sauté until they become translucent.

Add garlic and ginger, cook for another minute until fragrant.

Stir in chopped tomato and cook until it softens.
