Ingredients

  • 1 whole Cauliflower (medium-sized)
  • 2 cups Mixed vegetables (carrots, green beans, peas)
  • 1 medium Tomato
  • 1 medium Onion
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1 teaspoon Mustard seeds
  • 1 tablespoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • 2 whole Dry red chili
  • 1 quarter teaspoon Fenugreek seeds
  • 1 pinch Asafoetida
  • 10 leaves Curry leaves
  • 1 half teaspoon Turmeric powder
  • 1 tablespoon Tamarind paste
  • 1 to taste Salt
  • 2 tablespoons Ghee or coconut oil
  • 2 tablespoons Chopped cilantro
  • 2 tablespoons Peanuts
  • 2 cups Water

Directions

Step 1

1. Begin by preparing the cauliflower rice: wash the cauliflower, cut into florets, and pulse in a food processor until it resembles rice grains. Set aside.

Step 2

2. Heat 1 tablespoon of ghee or coconut oil in a pan over medium heat. Add mustard seeds and allow them to splutter.

Step 3

3. Add coriander seeds, cumin seeds, dry red chilies, fenugreek seeds, and asafoetida. Fry for about a minute until aromatic. Remove and grind to a fine powder once cooled.

4. In the same pan, add the remaining ghee or coconut oil. Add chopped onions and sauté until translucent.

5. Add ginger and garlic pastes and sauté until the raw smell disappears.

6. Add chopped tomatoes and cook until they turn mushy.

7. Add mixed vegetables, turmeric powder, and the ground spice mix. Stir well to coat the vegetables in the masala.

8. Mix in the peanuts, curry leaves, and a pinch of salt. Stir well.

9. Dissolve tamarind paste in water and add to the pan. Let it simmer for 5 minutes.

10. Add the cauliflower rice to the pan, stir well, and cook until the cauliflower is tender and the flavors are well combined, about 10 minutes.

11. Adjust salt to taste. Garnish with chopped cilantro before serving.
