  • 2 pounds beef chuck roast
  • 3 dried guajillo chiles
  • 3 dried ancho chiles
  • 2 dried pasilla chiles
  • 1 large onion
  • 5 garlic cloves
  • 14.5 ounces canned tomatoes
  • 1 tablespoon white vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 0.5 teaspoon cinnamon
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cups beef broth
  • 4 servings shirataki noodles
  • 4 sliced radishes
  • 1 sliced into wedges lime
  • 0.5 cup chopped fresh cilantro
  • 2 chopped green onion

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Remove the stems and seeds from the dried chiles. Toast them in a dry skillet over medium heat for about 2 minutes.

Soak the toasted chiles in hot water for 15 minutes to soften.

While the chiles are soaking, cut the beef chuck into large chunks.
