  • 500 g pork shoulder
  • 250 g smoked sausage
  • 150 g bacon
  • 500 g white cabbage
  • 500 g sauerkraut
  • 1 large onion
  • 3 cloves garlic
  • 20 g dried mushrooms
  • 500 ml beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp caraway seeds
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil

Directions

Step 1

Start by soaking the dried mushrooms in warm water for about 15 minutes, then drain and chop them.

Step 2

Cut the pork shoulder into bite-sized pieces and season with salt and black pepper.

Step 3

In a large pot, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon from the pot and set aside, leaving the rendered fat.

Add the pork shoulder pieces to the pot and brown them on all sides. Remove and set aside.

Slice the smoked sausage and add it to the pot. Cook until browned, then remove and set aside.
