Ingredients

  • 1 large Zucchini
  • 1 medium Onion
  • 1 cup Almond flour
  • 1 large Egg
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Cumin seeds
  • 0.25 cup Fresh coriander
  • 0.5 teaspoon Salt
  • 0.25 cup Vegetable oil
  • 1 teaspoon Baking powder

Directions

Step 1

Grate the zucchini using a box grater. Squeeze out as much excess water as possible using a clean cloth or paper towels. This will help create a crispier fritter.

Step 2

Thinly slice the onion and finely chop the fresh coriander.

Step 3

In a large mixing bowl, combine grated zucchini, sliced onion, almond flour, egg, chili powder, turmeric powder, cumin seeds, chopped coriander, salt, and baking powder.

Step 4

Mix everything thoroughly until well combined. You should have a thick batter consistency.

Step 5

Heat vegetable oil in a non-stick skillet over medium heat.

Step 6

Scoop about 2 tablespoons of the mixture to form each fritter. Carefully place them into the hot oil, gently flattening with a spatula.

Step 7

Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.

Step 8

Once cooked, remove the fritters and let them drain on paper towels to remove excess oil.

Step 9

Serve the low-carb bhajias hot with a side of mint chutney or yogurt dip.
