Ingredients

  • 1 cup Besan (Chickpea Flour)
  • 0.5 cup Coconut Flour
  • 0.5 cup Ghee (Clarified Butter)
  • 0.75 cup Erythritol (or preferred low-carb sweetener)
  • 1 teaspoon Cardamom Powder
  • 0.25 cup Almonds (finely chopped)
  • 0.25 cup Pistachios (finely chopped)
  • 0.25 cup Unsweetened Desiccated Coconut

Directions

Step 1

In a heavy-bottomed pan, heat the ghee over low-medium flame.

Step 2

Add the besan and coconut flour to the pan, stirring continuously to ensure it doesn't stick to the bottom.

Step 3

Roast the mixture for about 10-12 minutes until it turns golden brown and you notice a nutty aroma.

Step 4

Add the finely chopped almonds and pistachios to the mixture and continue to roast for another 2-3 minutes.

Step 5

Lower the heat and add the erythritol to the roasted flour mixture. Stir well to combine.

Step 6

Add the cardamom powder and unsweetened desiccated coconut to the mixture, stirring continuously for another minute.

Step 7

Remove the pan from the heat and let the mixture cool slightly until it is warm enough to handle.

Step 8

Once cooled, take small portions of the mixture in your hands and shape them into round balls (laddus).

Step 9

Allow the laddus to cool completely and set at room temperature before serving or storing.
