Ingredients

  • 100 grams Besan (gram flour)
  • 100 grams Spinach, chopped
  • 200 grams Cauliflower, finely chopped
  • 1 piece Green chili, finely chopped
  • 1 teaspoon Ginger, finely grated
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Garam masala
  • 500 milliliters Water
  • 2 tablespoons Oil (preferably olive or coconut)
  • 2 tablespoons Fresh coriander leaves, chopped

Directions

Step 1

In a mixing bowl, combine the besan with 200 ml of water. Stir to make a smooth batter without lumps. Set aside.

Step 2

Heat oil in a deep pan over medium heat. Add cumin seeds and let them splutter.

Step 3

Add the finely grated ginger and chopped green chili to the pan and sauté for about 1 minute until fragrant.

Step 4

Add chopped cauliflower and spinach to the pan. Cook for 4-5 minutes until they soften slightly.

Step 5

Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for an additional 2 minutes.

Step 6

Lower the heat and gradually add the besan batter to the pan while stirring continuously to avoid lumps forming.

Step 7

Add the remainder of the water and continue stirring. Cook on low heat for about 15 minutes until the curry thickens and the besan is fully cooked.

Step 8

Finish the curry with a sprinkle of garam masala, stirring well to combine.

Step 9

Garnish with freshly chopped coriander leaves before serving.

Step 10

Serve hot with a side of your choice, such as low-carb flatbreads or boiled eggs.
