Ingredients

  • 2 cups Almond flour
  • 0.5 cup Erythritol or preferred low-carb sweetener
  • 0.5 cup Butter, melted
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 cups Fresh berries (such as raspberries, strawberries, and blueberries), diced
  • 1 tablespoon Lemon juice
  • 1 tablespoon Chia seeds

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal.

Step 2

In a medium bowl, combine the almond flour, erythritol, melted butter, vanilla extract, and salt. Mix until the texture is crumbly and well combined.

Reserve about 1/2 cup of the mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the prepared baking dish to form the crust.

Bake the crust for 10 minutes, then remove it from the oven and allow it to cool slightly while preparing the filling.
