Ingredients

  • 100 grams unsweetened shredded coconut
  • 150 ml coconut cream
  • 50 grams granulated erythritol
  • 1 teaspoon vanilla extract
  • 30 grams unsalted butter
  • 1 pinch salt
  • 10 pieces whole cloves

Directions

Step 1

In a medium saucepan, combine unsweetened shredded coconut, coconut cream, and granulated erythritol.

Step 2

Place the saucepan over medium heat and stir continuously until the mixture comes to a gentle boil.

Step 3

Add the vanilla extract, unsalted butter, and a pinch of salt to the mixture.

Step 4

Lower the heat to medium-low and continue stirring. Allow the mixture to cook for 10-15 minutes or until it thickens and starts to pull away from the sides of the pan.

Step 5

Once thickened, remove the mixture from heat and let it cool slightly until it's comfortable to handle.

Step 6

Using your hands, roll small portions of the mixture into balls, about the size of a walnut.

Step 7

If desired, lightly coat each ball in additional shredded coconut for extra texture and flavor.

Step 8

Garnish each Beijinho with a whole clove pressed into the center.

Step 9

Place the finished Beijinhos on a plate and refrigerate for at least 30 minutes to firm up before serving.
