Ingredients

  • 400 grams Beetroot
  • 50 grams Grated coconut
  • 2 tablespoons Coconut oil
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 1 teaspoon Urad dal
  • 2 pieces Dried red chili
  • 10 leaves Curry leaves
  • 1 piece Green chili
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 2 cloves Garlic cloves

Directions

Step 1

Peel and finely chop the beetroot into small cubes.

Step 2

In a blender, add grated coconut, green chili, garlic cloves, and cumin seeds. Blend into a coarse mixture without adding water.

Step 3

Heat coconut oil in a pan over medium heat.

Step 4

Add mustard seeds and allow them to splutter.

Step 5

Add urad dal, dried red chili, and curry leaves. Sauté until the urad dal turns golden brown.

Step 6

Add the chopped beetroot and turmeric powder. Sauté for a couple of minutes.

Step 7

Cover the pan and let the beetroot cook on low flame for about 10 minutes or until tender. Stir occasionally.

Step 8

Add salt and the coconut mixture to the cooked beetroot. Mix well to combine and cook for another 2-3 minutes, allowing the flavors to meld together.
