Ingredients

  • 2 medium Fresh beets, washed and peeled
  • 4 large Eggs
  • 0.5 cup Almond flour
  • 0.25 cup Coconut flour
  • 1 tablespoon Psyllium husk powder
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

Grate the peeled beets using a box grater or food processor until fine. Squeeze out excess moisture using a cheesecloth or clean kitchen towel.

Step 3

In a large bowl, beat the eggs until combined, then add the grated beets.

Step 4

Stir in the almond flour, coconut flour, psyllium husk powder, olive oil, salt, and black pepper until a dough-like mixture forms.

Step 5

Divide the mixture into 8 equal portions.

Step 6

Place one portion of the mixture onto the lined baking sheet and flatten into a tortilla shape using the back of a spoon or your hands, keeping it about 1/8-inch thick. Repeat for all portions.
