Start by preparing your ingredients: slice the beef sirloin into thin strips, mince the garlic cloves, grate or mince the ginger, slice the red bell pepper into thin strips, chop the broccoli into bite-sized pieces, and slice the zucchini into half-moons. Chop the green onions and set aside for garnish.
Season the beef strips with salt and pepper. Add 1 tablespoon of coconut aminos and let them marinate for a few minutes while you prepare the other ingredients.
Drain and rinse the shirataki noodles under cold water for at least 2-3 minutes. This helps to get rid of their natural odor. Set aside to drain.
Heat a large, non-stick skillet or wok over medium-high heat. Add sesame oil to the pan.
Once the oil is hot, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
Increase the heat to high, add the beef to the skillet and stir-fry for 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
In the same skillet, add the red bell pepper, broccoli, and zucchini. Stir-fry for about 4-5 minutes until they are just tender but still crisp.
Add the remaining coconut aminos to the vegetables, and stir well to combine the flavors.
Return the beef to the skillet along with the drained shirataki noodles. Toss everything together to heat through for another 2-3 minutes.
Adjust seasoning with additional salt and pepper if desired. Serve hot, garnished with chopped green onions.
