Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 leaf bay leaf
  • 2 medium carrots, sliced into rounds
  • 1 cup frozen peas
  • 2 stalks celery, sliced
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

Season the beef cubes with salt and black pepper.

Step 2

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Add the beef cubes and sear them on all sides until browned (about 5-7 minutes). Remove the beef and set aside.

In the same pot, add the diced onion and cook for 2-3 minutes until softened.
