Ingredients

  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large, chopped onion

  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 medium, sliced carrot
  • 2 cut into chunks celery stalks
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Trim any excess fat from the beef chuck roast and cut it into 1-inch cubes.

Step 2

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Add the beef cubes in batches, searing them until browned on all sides. Remove the beef and set aside.

In the same pot, add the chopped onion and sauté for about 5 minutes until translucent.
