Ingredients

  • 500 g Ground beef
  • 12 pieces Large cabbage leaves
  • 250 g Cauliflower rice
  • 1 medium Onion, finely chopped
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Soy sauce
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Green onions, chopped

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large pot of boiling water, blanch the cabbage leaves for about 2 minutes until they are pliable. Drain them carefully and set aside.

Step 3

Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and garlic, sautéing until fragrant and the onions are translucent, about 3-4 minutes.

Step 4

Add the ground beef to the pan and cook until fully browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess fat.

Step 5

Stir in the cauliflower rice, soy sauce, and grated ginger. Season with salt and black pepper. Cook for another 3-4 minutes until the cauliflower rice is tender.

Step 6

Remove the mixture from heat and mix in the chopped green onions.

Step 7

Lay a cabbage leaf on a flat surface, spoon a portion of the beef mixture onto the bottom end of the leaf. Roll it up tightly, folding in the sides to enclose the filling. Repeat with the remaining cabbage and filling.

Lightly oil a baking dish with the remaining 1 tablespoon of olive oil. Arrange the rolls seam-side down in the dish.

Cover the dish with foil and bake in the preheated oven for 25-30 minutes, until the rolls are heated through and the cabbage is tender.
