Start by dicing the red bell pepper and small yellow onion. Mince the garlic cloves.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper and onion, and cook until they are tender, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
Add the ground beef to the skillet and cook until it is browned and fully cooked, breaking it apart with a spatula. Drain any excess fat.
