Ingredients

  • 500 grams lean ground beef
  • 4 pieces low-carb tortillas
  • 150 grams shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 whole small onion, diced
  • 1 whole bell pepper, diced
  • 2 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and bell pepper to the skillet and sauté for about 3-4 minutes until they are softened.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the ground beef to the skillet, breaking it apart with a spatula, and cook until no longer pink, about 6-8 minutes.

Step 5

Drain any excess fat if necessary and stir in the ground cumin, chili powder, paprika, salt, and black pepper. Cook for another 2 minutes to let the flavors meld together.

Remove the beef mixture from the skillet and transfer it to a bowl. Wipe the skillet clean with a paper towel.

Repeat the process with the remaining tortillas and filling.
